Für das Auge: Undurchdringliches Violett. In der Nase: Reife schwarze Früchte, Graphit, Lakritz und eine Spur von Gewürzen. Am Gaumen vollmundig und frisch, mit feinen, eleganten Tanninen und ausgewogener Struktur. Der grossartige 2021er Jahrgang, gekennzeichnet durch begünstigendes kühleres Klima und ausreichend Regen, besticht durch Balance zwischen Säure, Alkohol (14,5 %) und Konzentration. Die Trauben stammen von alten Tempranillo-Reben ( = Tinta de Toro) auf steinigen, sandig-lehmigen Böden. Nach der Vinifikation im Stahltank reifte der Wein 24 Monate in französischen Eichenfässern verschiedener Größen.

San Román Bodegas y Viñedos, geführt von Eduardo García, steht seit den 1990ern für hochwertige, langlebige Toro-Weine.
