Peter Michael's 2016 classic Les Pavots is a blend of 62% Cabernet Sauvignon, 18% Cabernet Franc, 13% Merlot and 7% Petit Verdot. The deep violet-black cuvée smells of crushed blackcurrants, blueberry jam and blackberry cake with hints of camphor, black earth, truffle, crushed rock and red roses and a touch of garrigue. Full, rich and with wonderful finesse on the palate, it has very fine-grained tannins, a lot of liveliness and tension and finishes very long and earthy.
